| I just bought a new Clean Eating magazine, and they have a recipe for Spicy Oven-Dried Beef Jerky:
2 lb eye of round beef roast, flank steak or London broil, trimmed of visible fat 2/3 c low sodium soy sauce 2/3 cup low sodium Worcestershire sauce 1 tsp raw honey 2 tsp fresh ground black pepper 1 tsp onion powder 1 tsp garlic powder 1 tsp red pepper flakes 1 tsp smoked paprika or liquid smoke, optional.
Freeze for one hr before slicing and prepare marinade. Let soak for 3-6 hrs, do not exceed 6 hours. Towel off meat, place drip pan in bottom of over or line oven w/ foil. Skewer through ends of strips and hang skewers across top rack, allowing strips to hang down. Cook for 5 hours with oven cracked open at 140-170F. Remove drier pieces and cook remaining strips 1-2 hours longer. Store in airtight container to up to 2 months. | |

| Thanks!!! Locutus that is the very first recipe I tried. heehee! I discovered Mesquite and Hickory liquid smoke at the market today. I think I'm going to try that with some molasses, soy, garlic and onion pwd. the red pepper flakes and some K.c. masterpiece Montreal steak seasoning, I will probably have to add honey or brown sugar to up the sweetness a bit. I got the dehydrator for my Christmas present and I've been snacking on it for lunch etc... I lost 3 lbs. last week, I wasn't even trying! Edit The Jerky I mean, I didn't eat the dehydrator! | |

| OK! I threw this marinade together, My Hubby doesn't like any sourness, so I left the Worcestershire out of this one. It really,really tasted good! Sweet and hot from the Sriracha! 1cup Soy Sauce 2 tbsp Allegro hickory sauce marinade 2 tbsp Hickory Smoke 2 tbsp Grill mates Montreal Seasoning 2 tsp Sriracha chili sauce 2 tbsp molasses 1/4 cup Desert Honey (raw/unfiltered) whatever 1/4 cup Brown Sugar 1 tsp Garlic powder 1 tsp onion powder I've made a couple of different jerky's, I even tried a ground pork recipe with Hawaiian marinade, As yucky as it sounds, it wasn't half bad, I won't make it again.... the dogs think it's awesome, they've learned a new word "Jerky" | |

| We can't buy liquid smoked whatever here......what would I use to replace it? | |

Yeah, researcher is right sweetie! I saw how they made it one time and the just burn wood in a smoker and then basically rinse the walls and Voila! Liquid Smoke, I don't use my smoker enough to do that! Besides I think it has spiders living in it. Well everything has spiders in it here by the water. | |
